Jack's Cheese Wafers

There are two popular versions of this recipe, one with Gorgonzola cheese and the other with cheddar and pepperoni.

These are a popular favorite whenever Jack brings them. This recipe makes about 70 wafers.

Ingredients:

  • 1 C. Gorgonzola cheese

  • 8 T softened butter (1 stick)

  • 1½ C. flour

  • 1/4 tsp salt

  • ½ C. walnuts, chopped fine

 

Equipment:

  • Rolling pin

  • 1½-inch cookie cutter

To prepare:

  1. Mix cheese, butter, flour, and salt until well blended.

  2. Add chopped walnuts to cheese mixture until well blended. Wrap in plastic and refrigerate until ready to bake.

  3. Preheat the oven to 350.

  4. On a floured surface, roll the mixture to 1/4-inch thickness.

  5. Cut with floured cookie cutter and place on foil-covered cookie sheet.

  6. Bake at 350 for 12-15 minutes.

  7. Transfer to a rack and cool. Store tightly covered to keep them crisp.

This is the happy result of Jack's personal project to improve upon the delicious preceding recipe.

Ingredients:

  • 3 C. extra-sharp cheddar cheese

  • 8 T softened butter (1 stick)

  • 1½ C.   flour

  • 1 C. thinly sliced pepperoni, chopped very fine

 

Equipment:

  • Rolling pin

  • 1½-inch cookie cutter

To prepare:

  1. Mix cheese and butter until well blended.

  2. Toss pepperoni with flour until lightly coated.

  3. Combine butter-cheese mixture with flour-pepperoni mixture until it forms a rough ball. Wrap in plastic and refrigerate until ready to bake.

  4. On a floured surface, roll the mixture to 1/4-inch thickness.

  5. Cut with floured cookie cutter and place on foil-covered cookie sheet.

  6. Bake at 350 for 11-12 minutes.

  7. Transfer to a rack and cool. Store tightly covered to keep them crisp.
