Lobsters can be steamed or boiled. If there is a black nasty ichor on the inside, it is underdone. Overdone lobsters get chewy, even inedibly so.
Use fresh seawater, or else water salted with 1 T salt per quart of water.
Start measuring time when the water is boiling again. For this reason, it is best to use a pot that is much bigger than the lobsters, so the water does not get cooled too much by the lobsters.
